Red Wine Documentation?!

Does anyone have any 14th C Red wine recipes that they can document?

Not a recipe, but perhaps a lead. When I was in the Cahors wine region of France recently, I was told that the first Pope in Avignon (1309) was from Cahors, and decreed that Cahors wine was to be used exclusively as the sacrament wine. This was good for the Cahors vineyards, to be sure! Apparently the peak of production in this appellation was in the 12th century, so certainly some long-standing traditions there.
So perhaps you could track down some info about how they were making that wine, since it was definitely being made in the 14th Century.
